Organic and Grassfed Beef
Just down the road from the dairy herd, a group of 60 Angus and Jersey steers are rotationally grazed in deep grass all spring, summer and fall. In winter they are fed haylage and housed in a free stall barn with rubber mats. Our steers receive no corn or grain of any kind in their entire life with the exception of the Jersey calves who get a little grain as babies. We go to great lengths to keep our beeves well fed and comfortable every day of their life. As a result, they are calm, friendly and...fat. (Tasty!)
The friendly Jerseys are organic from birth and are born on our farm. The rest of the steers are purchased as “feeders” usually at about 10 to 12 months of age and weighing about 500 pounds. If organic animals are available, we always buy organic. When they aren’t, we find conventional animals from within the neighborhood of the farm. Almost 100% of beef feeders are raised with their mothers on pasture and when we get them most have seen nothing but mother’s milk, grass, and hay. Usually they are vaccinated for common respiratory and digestive diseases before being sold.When they get to St Brigid’s, it is grass and sleeping under the stars in the summer and in the winter chopped hay while sleeping on clean, comfortable pasture mattes in a free-stall barn. No grain of any kind is fed to our beef animals on our farm. Ever. Besides grass and hay, all we give them is water and a free choice blend of 50/50 Redmond salt and kelp.
The land currently used to pasture the beef herd has been in the Hundt family since 1978 and has been farmed using purely organic practices since 1989. Certified organic since 2000, the pastures provide our steers with a healthy mix of legumes like alfalfa and red and white clovers, alongside a diversity of grasses that include quack, orchard, fescue, and brome.
This mix of grasses and legumes makes for robust, healthy animals with exceptional taste that comes from plenty of healthy fat marbled into muscle toned by walking and grazing. Beef from grass-fed animals has been shown to contain up to four times more omega-3 fatty acids than that from grain-fed animals and actually lowers your “bad” LDL cholesterol levels.
If you have seen movies like Food Inc. or read any of the dozens of recent books and articles about mass produced industrial beef, we do not need to remind you of where that beef comes from or how and where it is produced and processed.
